  • ½ teaspoon (2 g) black pepper
  • 1 cup (250 g) Bang Bang sauce, divided
  • 2 tablespoons (30 ml) sesame oil, divided
  • 4 large eggs, beaten
  • ½ teaspoon (3 g) kosher salt
  • 2 large carrots, diced
  • 1 large white onion, diced
  • ¼ cup (25 g) green onions, diced, plus more for garnish
  • 1 teaspoon (5 g) garlic, minced
  • 4 cups (800 g) long-grain white rice, cooked and cooled
  • ¼ cup (57 g) unsalted butter, melted
  • 1 teaspoon (5 ml) lemon juice
  • 2 tablespoons (30 ml) soy sauce
  • ⅓ cup (45 g) frozen peas

Instructions

  1. Cube chicken breasts into 1-inch pieces and toss with vegetable oil, paprika, garlic powder, salt, and black pepper.
  2. Cook seasoned chicken in skillet over medium-high heat until golden brown and cooked through. Remove and set aside.
  3. Heat 1 tablespoon sesame oil in the same skillet. Add beaten eggs and ½ teaspoon salt. Scramble until set then remove.
  4. Heat remaining sesame oil. Sauté diced carrots, white onion, and garlic until tender-crisp (about 4-5 minutes).
  5. Return chicken to skillet. Add cooked rice, melted butter, lemon juice, soy sauce, frozen peas, and ¾ cup Bang Bang sauce.
